Woodcock Breasts - Submitted by Rich Chmiel Ingredients:
Woodcock breast meat.
As lean a bacon as you can find (seems to be the hardest part of the recipe lately).
Crisp apple-peeled and sliced thin
Cheddar cheese-sliced thin
Filet breast meat off woodcock so you have two pieces. Lay bacon strip flat and place meat, section of jalapeno, a slice of apple, and cheese on top of the bacon. DOUBLE wrap the bacon around everything and secure with toothpicks. Double wrapping prevents overcooking. Place on grill and cook until bacon just gets "not quite crispy", flipping once. DON'T OVERCOOK!
